Nothing like good ole chicken soup. A wonderful comfort food. This recipe has a wonderful golden onion flavor.
1 envelope Lipton Golden Onion Recipe Soup Mix
5 cups water
2 1/2 to 3 lb chicken, cut into 8 pieces and skinned
2 medium carrots, coarsely chopped
1 large stalk celery, coarsely chopped
1 teaspoon thyme leaves
1 bay leaf (optional)
1/2 cup uncooked regular rice or pasta
In large saucepan or stockpot, thoroughly blend golden onion recipe soup mix with water. Add remaining ingredients except rice. Bring to boil, then simmer covered 45 minutes or until chicken is tender. Remove chicken and bay leaf; cool slightly. Remove meat from chicken bones and cut into bite size pieces; set aside.
Meanwhile, bring broth to a boil and stir in uncooked rice or pasta. Reduce heat and simmer covered 20 minutes or until rice or pasta is tender. Return chicken meat to broth and heat through. Makes about 7 servings.
