Lemon Cheese Pie
1 8 oz. package of cream cheese
1/2 cup sugar
1/2 pint heavy cream
2 frozen pie shells
Bake pie shells until golden brown. Mix lemon jello 1/2 cup hot water, 1/2 cup cold water; Beat cream cheese with 1/2 cup sugar until smooth; Whip up heavy cream and combine with jello; Blend in heavy cream and pour into pie shells. Refrigerate until firm.
This is a delicious pie. Christel, my office space co-worker, hair dresser and friend shared this recipe for a newsletter I was doing many years ago. The recipe is Axel's and at every food function we had we asked him to make this pie. Thanks Christel.
